Abstract

The aim of this study was an appraisal of estimates of pork musculature by means of two chirometrs borrowed for testing from two companies agency (Capteuer Gras/maigre – Sydel (CGM) and Ultra Form 300) and completing a choice of chirometr which would be precise and useful as an objective instrument of leanness estimation in slaughterhouse conditions, and obtained results will be the basis of supplier payments. During decision making many aspects were took into consideration, but undoubtedly one of them was correctness of survey, and as a result the slaughterhouse purchased the optical- needle CGM – Sydel device.
