Abstract

The aim of the study was to assess the carcass quality of broiler chickens selected from three production cycles in poultry farms in Podkarpacie province. Consumer expectations did not focus only on the quantity but mostly on the meat and carcass quality of poultry. The productive results obtained measured in terms of chick survival, feed consumption per kilogram of weight gain, final body weight as well as EWW indicators were comparable with the national productive results for broiler chickens. The research has shown that the carcass slaughter yield was within the 69.63-71.04 level. The percentage content of breast muscles ranged from 21.20 to 22.03%. The results obtained can be regarded as satisfactory. The chicken carcasses studied were characterized by low fat content, which is a proof of their high dietary and processing values.
